Not Ice Cream: Date-Tahini Yogurt Mousse

This is the second post in a new series! As I mentioned in the first post, I love making ice cream that’s lower in sugar and higher in protein, but it’s still ice cream, with significant fat and sugar. I wanted options that are even healthier, so I’m exploring some mousses and puddings based on Greek yogurt or silken tofu, which are lower in fat, sugar, and calories compared with my “improved” ice cream. I’m also adding nutrition information below the recipe. Second in the series: Date-Tahini Yogurt Mousse.

The short ingredient list includes dates, tahini, plain Greek yogurt, and a pinch of salt and cardamom. The yogurt must be Greek and plain, but you can use anything from fat free to full fat. I like 0%. The yogurt provides protein, and we avoid refined sugar by using dates to sweeten. You’ll need a small food processor or blender to puree the dates. A cool effect of blending dates with nut or seed butters (like tahini) is that they get a slightly fluffy, airy texture, which makes them more like classic mousse. The flavors are inspired by my Salted Date, Tahini, and Cardamom Ice Cream (vegan). The notes for that recipe list a bunch of flavor variations that would also work well for this yogurt-based mousse.

  1. SOAK DATES (optional)

    Place the pitted, chopped dates in a bowl and cover with the water to soak for a few minutes or up to several hours. This step is optional, but will help the dates puree more quickly and smoothly.

     

  2. PUREE EVERYTHING BUT YOGURT

    Add the dates, water, tahini, salt, and cardamom to a small food processor or blender. Blend until smooth.

     

  3. ADD THE YOGURT

    Either in the blender/food processor or in a separate bowl, combine the pureed date and tahini mixture with the Greek yogurt. Serve immediately or chill to serve later.
