For Peanut Butter-Chocolate Parfait, you’ll need a blender or food processor to make a peanut butter mousse with tofu. then you’ll melt chocolate with non-dairy milk to make a simple ganache. COMBINE AND BLEND
Add all the ingredients for the peanut butter mousse to a food processor or blender and blend until smooth.
For the Chocolate Ganache

MELT SLOWLY AND MIX
Combine the chocolate (chopped or in pieces) with the non-dairy milk in a microwave-safe bowl. Microwave on half powder for 15 seconds. Allow the mixture to cool on the counter for a minute or so and stir. If needed, microwave again at half power for 15 seconds. Repeat the process, microwaving in 15-second increments until the chocolate is melted. Be careful not to get the chocolate too hot, or it will become grainy. Use a whisk to combine.
